A tasty and easy meal to make. Served with mash, you can add some wine to your sauce if you have any but it’s equally as delicious without.

700g mixed button and chestnut mushrooms, halved if larger than bite-sized £1.69

150g baby leaf spinach £0.80
Small bunch flat-leaf parsley, roughly chopped £0.79
2tbsp olive oil
2 onions, finely chopped £0.38
2 cloves garlic, sliced £0.38

270g pack potato rösti, to serve £1.40

This makes a great pie filling - just top with puff pastry and bake for around 25 minutes
Cooking method
Heat oil in a large frying pan, add onion and garlic, and cook for 10 minutes until golden. Add mushrooms, paprika and lots of black pepper, and fry over a high heat for 5 minutes, stirring regularly so it doesn’t stick.
Add brandy and a pinch of salt and bubble for 1-2 minutes. Stir in the cream and bring to the boil. Simmer for 2-3 minutes until slightly reduced.
Stir in the spinach and parsley, and allow to wilt. Season well and serve with potato rösti.
