Rosemary Zucchini Pasta




A different take on the traditional pasta bake. Using dried herbs instead of fresh makes this highly cost effective. As is using Smartprice pasta from Asda which is only 31p per pack.

230g uncooked pasta £0.31p

1 vegetable stock cube £1 per pack

4 zucchinis, diced £1.26

2 red onions, finely sliced £0.40p

2 garlic cloves, crushed £0.48

1 red chilli, sliced £0.47

1tbsp chopped fresh basil £0.48

natural fromage frais (500g) £0.78p

¼ lb tomato passata £0.35

3tbsp virtually fat-free fromage frais £0.78

2tbsp chopped fresh parsley £0.50

Salt and freshly ground black pepper

Why not add any salad or vegetables you may have in your kitchen? Drizzle your favourite veggies in olive oil and oven roast for 25 minutes (turning over half way through)



 


Cooking Method


Preheat the oven to 190ºC (375ºF, gas mark 5).


Cook the pasta in a pan of boiling water containing the stock cube, then drain.


Add olive oil to a pan and preheat. Fry the courgettes, onion and garlic in the pan for 3- 4 mins. Add the chilli, basil and tomato passata. Bring the sauce to a gentle simmer, then stir in the cooked pasta and season with salt and black pepper. Ensure sauce does not boil.


Transfer to an ovenproof dish and bake in the oven for 30 mins. Just before serving, dot with fromage frais and sprinkle with chopped fresh parsley. Serve with fresh vegetables, salad or whatever sides you may have in your kitchen.
