Sausage and Vegetable Stew

A thick and warming stew everyone will enjoy. Filling and easy to make this one can be heated up the next day too if you have any left overs!

Ingredients priced from Lidl
2tbsp olive oil
8 thick pork sausages £0.84
1 large onion, peeled and chopped £0.19
1 garlic clove, peeled and crushed £0.19
4 celery stalks, chopped £0.89
2 large potatoes, peeled and diced £0.39
1tbsp paprika
300ml passata £0.29
400ml hot vegetable stock
400g can chickpeas, drained and rinsed £0.62
Few sprigs fresh thyme £0.65
Salt and freshly ground black pepper

Make this vegetarian or vegan friendly by substituting pork sausages for your favourite meat alternative. Or if you just fancy a change from pork why not try turkey sausages or garlic?
Cooking method
Heat the oil in a large deep flameproof casserole dish and fry the sausages over a high heat for 3-4mins until browned all over. Remove and set aside. If you’re using alternative sausages cook according to the instructions provided.
Add the onion, garlic, celery and potatoes to the dish and cover and cook over a low heat for 5mins, stirring occasionally. Sprinkle over the paprika and cook for 1min then stir in the passata and stock. Bring to the boil then reduce the heat to a simmer.
Slice each sausage diagonally into three and add to the dish with the chickpeas and half the thyme sprigs. Season with salt and freshly ground black pepper. Cover and simmer for 35-40mins until the vegetables are tender. Serve garnished with the rest of the thyme sprigs.
